What! ............another week has gone?

This seems to be a common thread with me..... time goes too quickly.......! I have been looking forward to a couple of days off work after a particularly busy time with vice regal visits and other things to organise.....So yesterday I had a little sleep in.....went down to the shops and got a few things.....food....nothing exciting..........came home and sat down - had some lunch....and slept for the rest of the day.....what is going on there..no wonder the time goes so fast......!! I felt really cheated....but I guess I needed the sleep.........it seems like I keep going and going and then when I take a day off I "hit the wall" so to speak.....yesterday it felt more like I had been hit by a bus!! So hopefully today will be a bit more productive.....I have done some washing and dusting so that is a start.......


Rhiannon is coming home for the weekend.....she injured her ankle playing netball the other night and is on crutches.....and finding the lack of mobility more painful than the torn ligaments......so the answer to that is.......come home to Mum...LOL......her boyfriend is off to a football training camp this weekend so will drop her off here on his way.......my Princess status pales into insignificance when Rhi is home.....! and I say that in the nicest possible way.....she is of course "a chip off the old block".......!.........and it will be wonderful to spend some quality time with her.......! All is in readiness for her arrival.....comfy chair......footstool......I will forgo the bell by the chair though!!! ....I see the Prince has a nice leg of lamb out for a roast dinner as well.....!

I had a couple of questions about lamingtons on my last post and one was a "no reply" blogger...so thought I would answer the question here...........Lamingtons are an Aussie "invention" said to be named after a former Governor of Queensland.....they are squares of butter cake (or sponge - I prefer butter cake - it is a bit more solid) which are dipped in chocolate icing and then covered in dessicated cocount...sometimes also made by joining two pieces of cake with jam before the icing and coconut...mine are just the single - no jam variety.

I use my Grandmother's Sunbeam MixMaster for all my baking...................I love it...it is in great condition and was built to last!! Mum had one the same (probably still has it today!) and I love the sound of the motor.....takes me back to when I was little - Mum is a great cook and was always baking .............

The ingredients are just the basic butter cake.....couple of eggs, and flour, sugar, vanilla and milk....nothing fancy here...................

Spread the cake mixture into a lamington pan and bake for about 20-25 mins.....

and...................this is the result........when it is cool, cut the cake up into squares and freeze them to make the next step easier.....there are crumbling issues otherwise......

.......when the cake squares are frozen...which doesn't take long..........make up a bowl of chocolate icing....needs to be thin but not too watery.......just a nice consistency to coat the cake .........I use a paper bag about quarter filled with coconut for the next step..........just drop the iced squares in ...hold the top and shake...works a treat!!!

.............and this is the finished product.......I was going to cut one to show you the inside .....but someone helped me out by taking a bite....and it didn't last long after the photo was taken...............!!

My lamingtons are not perfect .............they aren't perfect squares as sometimes the cake is thicker in some parts than others ...so I probably wouldn't win any prizes for them if they were entered in a show...but they don't last long so I am thinking that is a good indication that they aren't too bad!!!

Yesterday the postman's bike woke me up late in the afternoon.......and I found a package in the letter box with a customs sticker and international postage....yay....the lovely Nancy sent me some magazines......so the rest of the afternoon was spent reading them....thanks Nancy.....I really appreciate the thought......! I also recieved the next block in the Wool Garden BOM so will make a start on that today to get it ready to stitch......! I love nice things in the post!!

I am certainly enjoying my day at home today and a good rest yesterday has given me some energy .......I am doing the Time for Tea swap and have almost finished my projects for that.....I have been seeing some sneak peeks on other blogs and it looks like it there will be some happy swappers! I have resisted the temptation to sign up for a few swaps that are around at the moment as I just don't have the time to devote to more than one at a time - and would hate to "short change" my swap partner!

Time I was doing something else.......the day is half gone!!

Your lamingtons look fabulous - mind you nothing I make turns out looking perfect - they taste good, which is all that matters to me.

Hey Lorraine! Oh - I know just what you mean about your day off disappearing!! Today was like that for me! I think my clocks were all running fast and I lost at least two or three hours somewhere along the track and didn't get nearly as much done as planned! SIGH! Maybe tomorrow .... Bear Hugs! KRIS

Loved reading your blog and I could go a lamington right now too!! You're very good to make your own sponge, I always buy a packet of 2 round plain sponges and cut them up. My mum's version for the coating is 3 cups of sugar, 3/4 cup water and 3 dspns of cocoa. Bring to boil in saucepan and dip lamingtons, then roll in coconut. Place in fridge. The result is a crunchier coating. Just a different take on the soft coating.

Your Laminton's look so yummy! I'm one of the bloggers who asked about it and now I have a visual too! Yahoo! They would be eaten all too quickly in this house. I bet you needed that sleep. I have times that I just have to have a nap and I feel as though it was a wasted day; but the nap feels so good!

This is very strange... over the weekend we caught up with some friends and she had made a batch of lamingtons which we shared over coffee... I haven't had them in years and they were delish and looked just like yours. My Mum and Nanna both had the Sunbeam mixmasters as well & I can still remember some of the yummy things they made, precious memories...

Bring back the mixmaster I say. Lamingtons are the best, just cant bear all the palaver of of making them.
I had the most wonderful day today managed to slip in a 3 hour nanna nap, how cool is that.
